GELATIN POWDER:
Step 1
Place tablespoons of water, or tablespoons of the liquid that needs to be set, into a small heatproof bowl. Sprinkle the powdered gelatin over the liquid and stir until the gelatine is fully incorporated.
Step 2
Place the bowl in a pan of barely simmering water. Leave until the gelatin has completely dissolved and turned transparent, approximately 5 minutes.
Step 3
Test the gelatin by dipping a spoon into the liquid. If any undissolved granules stick to the spoon it needs a little longer. Don't take the gelatine off the heat until all the granules have dissolved. Never let it come to the boil.
Step 4
If you place water at step 1, strain the gelatin into the liquid that needs to be set.
GELATIN SHEET:
Step 1
Soak the required sheets in cold water to soften and allow it to easily dissolve. Remove the pliable sheets from the water and squeeze out the excess liquid.
Step 2
If the gelatin sheet is to be used in a hot liquid, simply add it now, and stir to ensure it completely dissolves.
If the gelatin sheet needs to be added to a cold liquid, you will need to melt it. Just place the gelatin sheet you got at step1 in a saucepan over a gentle heat. Allow the gelatin to slowly melt, approximately 30 seconds. Stir it to ensure it doesn't stick to the pan. Once it has melted, remove from the heat and add to the cold ingredients, stirring well to ensure it is well incorporated.
